Hayley, thanks for reading! Think “significantly less” depends on what restaurants we’re comparing ourselves to, and whether those employees are taking cash home, declaring tips, etc. Overall, FOH employees make $25-$30/hour, depending on that week’s sales. Compared to what they were making before, it’s a bit less (approximately $1-$2/hour), but less volatile, and supplemented by the health insurance. I harp on this a bit less, but I also think tipping creates problematic dynamics within the restaurant itself, from servers fighting for tables, or disputing who they have to tip out and when, the team mentality is certainly a pleasant departure for everyone involved (guests included!)
